Guacamole (onion and garlic free)

I have never met a fresh guacamole I don’t like. I love it on all of my Latin favorites, as a dip for raw veggies, or just by the spoonful.

This recipe is really fresh and simple. Hold the garlic and onion breath please!

Did you know avocados are a nutrition powerhouse packed with healthy fat and 9 grams of fiber per avocado? They are also high in vitamin C, potassium and magnesium.

Ingredients
1 avocado, seeded, peeled, cut in chunks
1 Tbs. fresh lime juice
1 Tbsp. fresh chopped cilantro
cracked pepper
pinch of sea salt
tiny pinch of cayenne pepper (optional)

Procedure
Mash avocado with lime juice in a bowl to desired consistency.
Gently stir in remaining ingredients.

Cashew Herb Dressing

Unlike conventional dressings filled with processed oils, artificial ingredients and stabilizers, this cashew herb dressing is made with only fresh, raw ingredients like cashews, extra virgin olive oil and fresh herbs. Use it as a dressing on a salad or as a dip for raw veggies.

Ingredients
1 1/2  cups cashew cream
2 Tbsp. apple cider vinegar
3 Tbsp. fresh lemon juice
1 Tbsp. dijon mustard
2 tsp. raw honey (substitute maple syrup for true vegan)
3 cloves fresh minced and crushed garlic (a garlic press works best)
1/2 tsp onion powder
1/2 tsp. fine Himalayan or sea salt
1/4 tsp. fresh cracked pepper
1/4 cup extra virgin olive oil
3 heaping Tbsp. minced fresh parsley
1 heaping Tbsp. minced fresh basil
1 heaping Tbsp. minced fresh dill

Procedure
Add all of the ingredients except for the olive oil, parsley, basil and dill to a medium bowl and whisk until everything comes together. Continue whisking while adding the olive oil in a stream. Gently whisk in parsley, basil and dill. Refrigerate in an airtight container like a mason jar.

Cashew Sour Cream

If you are sensitive to dairy or avoiding it for other reasons, this dairy free option can be used in any recipe that calls for sour cream.

 

Ingredients
1 1/2 cups raw cashews, soaked for 2-4 hours, rinsed and drained
1/2 – 2/3 cup filtered water (the amount of water will depend on how long the cashews were soaked and the desired consistency)
3 Tbsp. fresh lemon juice
2 Tbsp. fresh lime juice
1 tsp. apple cider vinegar
1/4 tsp. Himalayan or sea salt

Procedure
1. Place cashews, 1/2 cup water, and the remaining ingredients into the container of a high speed blender like a Vitamix and secure lid. Select Variable 1. Turn machine on and slowly increase speed to Variable 10, then to High.
2. Blend until the mixture becomes smooth and starts to thicken. With the motor running, slowly add more filtered water until you reach your desired consistency keeping in mind that cream will thicken slightly when refrigerated.
3. Store in the refrigerator in an air tight container like a mason jar.

Cashew Cream

If you are looking to avoid dairy or animal products entirely this cashew cream can be substituted for heavy cream in just about any recipe. I have been using it to make french onion dip, creamed spinach, creamy soups, salad dressings, Swedish cream and more.

Ingredients
1 cup raw cashews, soaked for 2-4 hours, rinsed and drained
3/4 cup filtered water
1/4 cup filtered water (more or less depending on how much water the cashews absorbed during soaking)

Procedure
1. Place cashews and 3/4 cup water into the container of a high speed blender like a Vitamix and secure lid. Select Variable 1. Turn machine on and slowly increase speed to Variable 10, then to High.
2. Blend until the mixture becomes smooth and starts to thicken. With the motor running, slowly add more filtered water until you reach your desired consistency keeping in mind that cream will thicken slightly when refrigerated.

Real Whipped Cream

There’s nothing better than real whipped cream to top your favorite dessert or added to fresh or frozen fruit—a favorite at our house.

This recipe uses a touch of vanilla and local grass fed cream. If you can’t find a good local dairy that offers grass fed cream in your stores, Organic Valley does have a grass fed cream that I will use on occasion. Like most cream that comes from large manufacturers, Organic Valley adds gellan gum, an anti-settling agent, thickener and stabilizer to their cream. It’s not a necessary additive and cream that contains it doesn’t whip up as nicely as pure whipping cream.

Adding any kind of sugar to whipped cream isn’t really necessary, however my kids prefer it with a touch of pure maple syrup added for sweetness.

12 oz. local grass fed cream
2 tsp. pure vanilla extract
1 – 2 Tbsp. pure maple syrup (optional)

Pour cream, vanilla, and optional maple syrup into a medium bowl and whisk on high speed until medium peaks form, about 1 minute. Do not over beat.
